Is it possible to create a symbology for a point theme, not circular but ellipse-shaped? The data I have are:
Coordinate of points and two sizes (width and length). They are to represent the crown of the trees.

There is no out of the box way to do this with ArcGIS 9.x but version 10.0 has the Table to Ellipse tool that you can use. The inputs are shown below:
