Erasing Polygon from a Raster

I am attempting to cut a number of polygons out of a raster dataset. Essentially I want to remove all of the public lands from a forest cover dataset to leave only private lands. I do not have access to erase and am using ArcMap 10 with Spatial Analyst.

There are a number of ways to do this but the easiest is probably to use the Extract by Mask tool in the Extraction toolset of Spatial Analyst. In this case, your forest cover data set is the input raster and you will use the private land polygons as the feature mask data. So you will first want to create a new layer with only those private land polys in it before you use this tool.
