How do I color scheme a soils data, if there are 73 different soil types?

This is a tough one. You will never be able to keep all 73 classes visually distinct based on color alone, so one solution you will sometimes see cartographers use is a small label placed within the polygon and within the lgend patches that help the reader to know which class each polygon falls within. Usually the labels are abbreviations so that they can be used even within small polygons.  For the smallest polygons, the abbreviated labels may not fit either, in which case leader lines are helpful.
