setting spatial reference system

I have a raster file with undefined spatial reference system, when I set this to LAEA, on raster dataset properties, then click apply it immediately reverts to undefined. If I try to reset using the define projection tool in arcmap, it says completed successfully in 0.0 seconds, and again remains undefined. I've tried exporting to layer file, sid etc, and re unzipping my original download file to make a copy... any suggestions greatly appreciated!

The .rst file format indicates to me that these are IDRISI files -- see the help topic on supported raster dataset file formats. In this help topic you will see that these files are read-only in ArcGIS so you will have to convert the files to a format that is also write supported so that you can define the projection. Once you do that, you should be able to use the Define Projection tool properly. This is the best way to set the spatial reference for the files.

I tried this using the following steps for me and it worked with your data.  Create a new file geodatabase. Right click the GDB name in ArcCatalog and select Import > Raster Datasets. Then select the file that you want to import into the GDB. Then you can use the Define Projection tool on the new rasters in the GDB.
