Digitize contours from an image to get XYZ data

I have a georreferenced image of a map containing contours that are not the terrain surface topography, so I would like to digitize them to get a contour file or an XYZ file. Is that possible? Thank you in advance

Yes, you can do this. Once you digitize the contour lines and attribute them with the elevation values, taht will be your new digital contour file. You can also use that file as the input in the Topo to Raster tool to create a DEM surface from the input conotur data.
