Want to define given polygones/polylines as symbols

Another application gave Symbols - now polylines/polygones in ESRI. How can I define these graphs as symbols?

If you are asking how you can make a symbol out of there graphics, there are two ways. In the first of your two example graphics (the blue, green and white image), if you save the image file to either .emf or .bmp format, then you can use that in a picture marker symbol. In the second of your two example graphics (the red outline of parts of the first symbol), a solution might be to convert this to a font that could be used in a symbol. Here is an Ask a Cartographer question we answered previously that provided information about this approach:
